One pipeline that takes code from commit to a running pod with real controls: secret scanning, SAST, dependency scanning, image scanning, an SBOM, signing, and an admission policy. Just as important, it should show each control failing on purpose and explain why it exists.
Project 1 and Project 3 run locally on a kind cluster with no cloud account. Project 2, the cloud baseline, needs a sandbox AWS account, and it is optional if you do not want to spend or manage one.
One complete project that you can explain line by line is stronger than three shallow ones. Start with Project 1, and add the others only if you finish them properly.
Start from the risk, name the control that reduces it, then say how you would prove the control works and what it costs developers. Interviewers reward that reasoning more than a memorised tool list.
